You know we love late night snacks – especially when we are working late.

 

 

Here’s what half of us are doing: Ben is working on printed materials for an upcoming promotion (if you’re thinking giveaway, you’re right).  Stephen is trying to get a scheduling app on the website.  Beau & Red (our lab/beagle mix puppies) are combination keeping the sofa warm and providing us with a white-noise-esque soundtrack.

And I’m trying to set up a visit to the new Kendra Scott store in Plano.  First step is storyboard, then scheduling everyone, and then having my people call Kendra’s people.

Or calling them myself, more like.

They’re lovely to work with, by the way.  They did a fabulous event to benefit the Junior League of Dallas in 2012.

But back to food…

 

Nothing is quite like chips and salsa for me.  It’s an addiction! Especially after all those calls and emails. How many times should the waiter refill your table’s chips before they no longer break even?

If you’ve been here already you know that Urban Rio serves up a delicious chips & guac too. It is one of the best in Plano.  If you’re into seafood, the shrimp ceviche is also a good late-night snack option.

Urban Rio’s Executive Chef was formerly Executive chef at eatZi’s in Oaklawn ….Mmm eatZi’s. Don’t get me started on that.

We ordered the Enchiladas, the Ceviche, and the Tamale Pie. We were the most impressed with the Chips & Guac. And the drinks. Maybe it’s that late-night vibe we were getting but it just seemed like one of those nights when you want to munch on a bunch of food and talk all night.
